Grilled Chicken Pesto Sandwich

Ingredients:

- 2 boneless, skinless chicken breasts

- 4 slices of ciabatta bread

- 2 tablespoons of pesto sauce

- 4 slices of mozzarella cheese

- 1 tomato, sliced

- 1 cup of fresh spinach leaves

- Salt and pepper to taste

- Olive oil for grilling


Instructions:

1. Preheat your grill or grill pan to medium-high heat.

2. Season the chicken breasts with salt and pepper on both sides.

3. Drizzle olive oil over the chicken breasts and place them on the grill.

4. Grill the chicken for 6-8 minutes on each side, or until cooked through and no longer pink in the center.

5. While the chicken is grilling, lightly toast the ciabatta bread slices on the grill.

6. Once the chicken is cooked, remove it from the grill and let it rest for a few minutes.

7. Spread pesto sauce on one side of each toasted ciabatta slice.

8. Place a grilled chicken breast on top of the pesto on two of the bread slices.

9. Top each chicken breast with two slices of mozzarella cheese.

10. Add sliced tomatoes and fresh spinach leaves on top of the cheese.

11. Place the remaining two bread slices on top to form sandwiches.

12. Return the sandwiches to the grill and cook for 2-3 minutes on each side, or until the cheese is melted and the bread is toasted.

13. Remove the sandwiches from the grill and serve hot.

14. Enjoy your delicious grilled chicken pesto sandwiches!
